Experience Alaska Gourmet Cuisine at Talon Lodge’s Chef Series

Talon Lodge is not only a luxury fishing lodge but during its peak season they invite world-renown chefs to host the Chef Series. After a day spent fishing the fresh and salt waters surrounding Sitka, guests will be treated to incomparable gourmet cuisine. The dishes are created using as many locally sourced and sustainable ingredients as possible. Each chef adds their unique innovative touch to their recipes.

Chef Adam Pechal

Sacramento-based Celebrity Chef Adam Pechal has worked under, and with, some of chef adam pechalthe most noted Chefs in America. A Culinary Institute of America top graduate, his experience encompasses Southwestern, Latin and Italian cuisine as well as Asian, French and American Fusion. Chef Adam has operated Tuli Bistro and Catering as well as Restaurant Thir13en in the Sacramento area. He has taken first place in multiple competitions including the Grape Escape Challenge, Celebrity Chef Challenge sponsored by InAlliance, a local rib-cook-off called the Jr. Chef Competition and was a contestant on ABC’s “The Taste”. His passion for farm to table cuisine in combination with innovative techniques elevates his dishes beyond exceptional.

Chef Nico Romo

Chef Nico RomoNico Romo earned the coveted title of Master Chef of France, one very few hold. Classically trained and tutored by the finest culinary leaders in France, he stands out for his vibrant interpretations of traditional French cuisine with subtle Asian influences using sustainable and locally-sourced ingredients and even had the opportunity to attend and cook for two James Beard house dinners. He is dedicated to his support of regional farms and seasonal ocean-friendly seafood and passionate about community organizations like WINGS for Kids and Louie’s Kids.

Chef John Ash

Chef John Ash, commonly referred to as the Father of Wine Country Cuisine, pioneered the use of local, seasonal ingredients to create dishes that Chef John Ashcomplemented the wines being made in the region. John has a namesake restaurant; Santa Rosa’s John Ash & Company, hosts two Food Network shows, has written 3 books and was named “Cooking School Teacher of Year”. Chef Ash is a two-time winner of the James Beard Award for excellence in cuisine, culinary writing, and culinary education in the United States. He is also an adjunct instructor at The Culinary Institute of America at Greystone in the Napa Valley. As well as traveling across the globe teaching professional and home cooks, John was recently names the “Seafood Educator of the Year” for his work educating the public and his industry on sustainable seafood practices.

Chef Sam Choy

Sam Choy is one of the most sought-after celebrity chefs in the world and is best known for his Pacific Rim and Chef Sam ChoyHawaiian Regional Cuisine. Chef Sam has cooked for Presidents and Royalty and other well-known public figures. He owns restaurants in Hawaii and Washington state that feature fresh seafood and local Island favorites. Sam has authored 9 cook books and appeared on numerous food shows including Iron Chef, Emeril Live!, and East Meets West with Ming Tsai. Sam has been featured in numerous national publications among such as Sunset Magazine, The Wall Street Journal, Gourmet Magazine and Bon Appétit and has won a James Beard American Classic Award. Chef Sam Choy has joined Talon Lodge before for the Chef Series, wowing the guests with extraordinary dishes and entertaining the crowd with his amusing stories.
