Blackened Rockfish & Apple Slaw Tacos

Ingredients

For the Blackening Spice Mix
• 2 tbsp Smoked Paprika
• 2 tsp Garlic Powder
• 1 tbsp Onion Powder
• ½ tsp Dried Thyme
• ½ tsp Dried Oregano
• 2 tsp Salt
• 2 tsp Pepper


For the Fish
• Rockfish pieces
• 2 tbsp Brown Butter
• A bit of Oil


For the Apple Slaw
• 1 Green Apple, julienned
• 1 Red Apple, julienned
• ¼ head Cabbage, julienned
• ½ Red Onion, julienned
• Zest and juice of 2 Limes
• 2 tbsp Rice Vinegar
• 1½ tsp Salt
• 1½ tbsp Sugar

Directions

1. Mix the Spice
Combine all dry ingredients (smoked paprika through pepper) in a bowl.
2. Prepare the Brown Butter
Melt the butter until it browns lightly, then set it aside to cool/chill.
3. Season the Fish
Sprinkle rockfish pieces generously with the spice mix, rubbing it in so all sides are well-coated.
4. Coat Fish
Drizzle the brown butter + a little oil over the spiced fish, making sure each piece is coated.
5. Grill
Grill the fish ~1 minute per side, or until cooked through and nicely blackened.
6. Make the Slaw
In a bowl, toss together green apple, red apple, cabbage, and red onion. Add lime zest & juice, rice vinegar, salt, and sugar.
7. Rest & Drain
Let the slaw sit for ~15 minutes. After that, drain off excess liquid.
8. Assemble Tacos
Fill tortillas with blackened rockfish, top with apple slaw. Optional: garnish with lime wedges or fresh herbs.
