Halibut Mariscos with Pene Puri

Ingredients

 • 1 lb halibut, diced
 • ½ cup salsa negra
 • 1 cup Clamato
 • 1 cup orange Fanta
 • 1 cup lime juice
 • 1 tbsp Worcestershire
 • ½ cup ketchup
 • 1 cup tomato puree
 • 1 cucumber, diced
 • 1 mango, diced
 • ½ avocado, diced
 • ½ red onion, diced
 • ½ bunch cilantro, chopped
 • Salt and pepper, to taste
 • Pene puri shells
 • ½ gallon water
 • Handful thyme
• Handful rosemary
 • ½ cup garlic
 • 2 lemons, halved
 • ½ cup salt

Directions

Prepare poaching liquid with water, herbs, garlic, lemons, and salt. Simmer halibut for 10 seconds,
 then cool.- Mix with salsa negra, Clamato, Fanta, lime juice, Worcestershire, ketchup, and tomato puree.- Fold in diced vegetables, fruit, and cilantro. Season to taste.- Spoon into pene puri shells and serve immed
