Flourless Chocolate Cake

SERVES 4

Ingredients

4 ounces semi-sweet chocolate, chopped (or chips)
6 tablespoons unsalted butter
2 large eggs
1/4 cup granulated sugar
pinch salt
Ganache, recipe below, if desired

Ganache

2 cups heavy cream
1 1/2 cups dark chocolate chips
 

Directions

Preheat oven to 350 degrees Fahrenheit. Spray 4 1-cup ramekins with baking spray or rub with softened butter.
Place chocolate and butter into a small bowl. Microwave in 30 second increments, stirring in between, until chocolate is melted and smooth, about 1 1/2 minutes total. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, mix eggs, sugar, and salt on medium speed until fluffy, about 2 minutes. Turn to low speed and add melted chocolate, mix until combined.
Evenly divide batter among prepared ramekins. Bake 10 minutes or until slightly puffed but center is still loose. Serve topped with Ganache (recipe below), if desired.
*If you don’t have ramekins you can bake this into an 8-inch brownie or cake pan. You can also top this cake with whipped cream, powdered sugar, or berries for a different flavor.

Ganache

In a small pot, heat milk over medium heat until simmering; remove from heat. Add chocolate chips and let rest for 1 minute or until chocolate begins to melt. Whisk until chocolate is fully incorporated. Chill until ready to use. To reheat: Microwave in 30 second increments, stirring in between, until melted.
