Grilled Shrimp Salad with Green Goddess Dressing & Candied Pecans

Ingredients

For the Grilled Shrimp

1 lb large shrimp (16–20 count), peeled & deveined

2 tbsp olive oil

1 garlic clove, minced

1 tbsp lemon juice

1 tsp smoked paprika

1 tbsp chopped parsley

Salt & black pepper, to taste

For the Candied Pecans

1 cup pecan halves

2 tbsp butter

3 tbsp brown sugar

1 tbsp maple syrup

Pinch of salt

Optional: pinch cayenne or smoked paprika

For the Green Goddess Dressing

1 cup mayonnaise

½ cup sour cream

1 tbsp anchovy paste (optional)

1 tbsp lemon juice

1 tsp Dijon mustard

1 garlic clove

¼ cup parsley

2 tbsp tarragon or basil

2 tbsp chives

Salt & pepper

Water (to thin)

For the Salad

5 cups mixed greens (baby lettuce, spinach, arugula)

1 cup cherry tomatoes (red & yellow), halved

2 watermelon radishes, thinly sliced

1 apple, julienned

1 avocado, sliced

½ cup candied pecans

2 tbsp crispy quinoa or toasted seeds

Directions

1. Candied Pecans

In a skillet over medium heat:

Melt butter, add brown sugar and maple syrup

Stir until bubbling and slightly thickened

Add pecans and toss to coat evenly

Cook 2–3 minutes until glossy and caramelized

Spread onto parchment paper, sprinkle lightly with salt, and let cool completely.

???? Chef tip: Break apart once cooled for clean, glossy clusters like in the photo.

2. Marinate & Grill Shrimp

Toss shrimp with olive oil, garlic, lemon juice, paprika, parsley, salt, and pepper.
Marinate 15–20 minutes.

Grill over medium-high heat for 2–3 minutes per side until lightly charred.

3. Green Goddess Dressing

Blend all ingredients until smooth and bright green.
Adjust thickness with water until drizzle-ready.

4. Assemble the Salad

Lightly toss:

Greens

Tomatoes

Radishes

Apple

Add a light base coat of dressing.

5. Plate (Talon Lodge Style)

Build salad in a wide white bowl

Arrange grilled shrimp on top

Add avocado slices

Scatter candied pecans generously

Drizzle Green Goddess in a loose zig-zag

Finish with crispy quinoa/seeds
